Coconut Honey Basil Popsicles

Bring the ice cream parlor home this summer with homemade Coconut Honey Basil Popsicles .

Ingredients- 

  • 4-5 Uptown fresh basil leaves 
  • 14 oz can of coconut milk I used full fat
  • 3 tablespoons honey
  • 1/2 teaspoon Nielsen-Massey Lemon Extract

Instructions- 

  • To a blender add coconut milk, honey, basil and lemon extract.
  • Blend till everything is well combined and mixture looks smooth. You may strain the mixture at this point.
  • Pour the mixture into popsicle molds, cover, insert sticks and freeze overnight. In case your mold don't have a slot for sticks, let it freeze a little, for around 2 hours, then take the molds out and insert stick in the center.
  • Place popsicle molds under warm water for few minutes and then pull gently for an easy release.
